I've been wanting to write this up for a while now but I've been so poorly that I've had to step away from the laptop. Thankfully I'm feeling a little better! Before I start, the lovely folks at BuyWholefoodsOnline.co.uk have helped me to make this recipe by supplying at least 4 of the ingredients. Their Coconut oil, Maple Syrup, Macadamia Nuts and the most important: Cashew nuts.

2017 Moo Free Bake Off ~ Vegan & Gluten Free Chocolate Cake
Today I bring you a delicious cake that has taken me absolutely ages to perfect. There are so many different recipes out there on the net for all manner of free from foods and vegan cakes are no exception...Except, that every single one I looked at had a bunch of different flours, or a load of raw ingredients not to mention all the different types of foods or products that you have to go through to make a decent egg replacement.
I finally feel, after well over a year, I have found a recipe that whilst is still not as cheap to make as gluten and egg containing cake recipes, it works and is no where near as pricey as some of my previous experiments!
In this post I have used Moo Free baking chocolate drops which are available from all major supermarkets priced at £2.18 (Morrisons). I was sent my packets free of charge to participate in Moo Free's Bake Along which is a nod towards the wonderful Bake Off that I'm very glad is back! Moo Free chocolate is certified organic, GMO free and free from dairy, wheat, gluten, casein and soya making it ideal for my friends daughter's birthday!

Last Day of School 2016
A cake I made for the reception class to say goodbye
I have real mixed emotions about my children finishing their school year. I'm finding with A I'm really excited about his next step in education and I've had some wonderful support from his teachers and other staff in regards to his transition. His teacher next year is known by us and him as she taught him in nursery and we had a great parent teacher relationship then and still get on really well now. I don't believe he'll struggle to settle in any less than most of the children in his class and in fact, most children going from a play based learning environment in reception to a year 1 class where it's more structured, involving guided reading and a morning of English then Maths, phew! It's going to be tough for almost all of the children so I'm not worried about A as much as I was a few months ago before we had his meetings.
It's Midge that is giving the me the most anxiety. Last night I couldn't sleep so stayed on the sofa for a bit thinking and it just hit me that she's going into year 4..year 4!? That means she has only a couple of years left of primary and I feel so, so nervous for her. She's so quiet and sensitive and has had a few issues at school with the other girls. It's fair to say that my own experiences of school and seeing my girl almost following in my footsteps in regards to wanting to be friends with everyone and be kind, not wanting to upset anyone and being pretty shy brings back a heck of a lot for me and whilst I am not showing my insecruteris or anxieties in front of her, I'm really struggling to get over the fact that she's getting older and it's like, where the heck has all this time gone?
Anyway, they were both really excited yesterday. Midge has a post on her own blog about her last day. She left sobbing, A left hyper as anything, no idea what they fed them at their party! A had a small graduation ceremony which was lovely if a little long winded, he received an award for his phonics and hard work. Midge came home with her certificate yesterday which was for 'always being a fabulous friend.' I couldn't be happier! They both looked so grown up in their non uniform and trotting into school with their teacher gifts. A left school with a lovely goody bag from his teachers which I thought was a lovely touch.

So now it's time for the summer holidays and I am looking forward to them. I'm not sure I can compete with last year but i'll give it a good go! I'll be posting up my summer bucket list soon as we all have ideas we want to share and put some adventures on our calendar!

Weekend Box Club Review!
I've wanted to try a craft box out for ages, I have used one before but I couldn't commit to the payments which I'm hoping will be easier this time around because the boxes don't cost as much! I'm reviewing a new Mini Weekend Box costing just £4.95 (plus free delivery) from The Weekend Box Club, a great company getting children (and their parents and carers in most cases!) involved in more green craft, baking, exploring and one on one time.
The first thing we loved was the box itself. With all the colour and the animals printed on the front, both children knew the box was just for them and became very excited to open it! I like the fact the box just slips through the letterbox, I don't have to worry about being in for its arrival and disappointing the children if I happen to miss it.
There are two different crafts in the box, one is a make and one is a gardening craft. Ideal, one each. There is a theme to each box sent out, this one was a rainforest theme so we had a parrot mask to make which Midge claimed and some seeds to grow, which is right up Little A's street. You can subscribe to the bumper weekend boxes if you fancy more crafts and have more time.
First the parrot, I think you'll agree Midge did a great job on her mask. Everything was supplied and Midge needed very little help from me.
Next the planting! The only extra we needed was an empty plastic bottle that Midge fetched from the recycling bag. Working together we cut the bottle in half then added our soil into the bottom. After following the instructions, we put our seeds into the soil and placed the bottle on our kitchen windowsill. I will be putting our plants' journey on my Instagram so do follow me for our rainforest update!

Delicious Free From Chocolate Pastry Roll
I did bake a pastry related item however but chose not to link it because my bake didn't match any of the challenges. This bake is super easy, it's a gluten and milk free chocolate pastry roll and was delicious.
Budget Gluten Free Pork, Apple and Stuffing Pie
You will need (for 2 small bowls or 1 small dish)
- Shortcrust pastry either bought from a supermarket or use 80g Doves Farm plain flour and 3 tbsp dairy free butter plus some salt mixed together into crumbs with your fingertips then brought together with 1 egg and a little water into a ball
- 5 pork pieces (I bought a frozen bag which suited my food budget)
- Gluten free stuffing mix
- Jar of apple sauce
First I defrosted my pork pieces then placed them in a pan with a small amount of oil. When they were cooked I used kitchen scissors to cut the pork into smaller chunks (can't be the only one with rubbish cutlery!?) I made my pastry as the pork kept warm and kept it to one side.
I added a jar of apple sauce to the pork then separated my half and the husbands for the stuffing which I sprinkled on top. I added some boiled water to mix the stuffing in with the pork and apple. When I make a bigger pie I do make my stuffing mix in a jug then pour on top but as these are small pies there really is no need
With the filling in the bowl I separated the pastry ball into 2 then rolled flat before covering both dishes, marking and brushing with milk (you can use an egg wash if you prefer) I used up my left over pastry by making pastry hearts!
The pies were cooked on 180 for 25 minutes and then had 5-10 minutes at 200 before being removed from the oven.
I was really pleased with how they turned out, the pork was really nice.
Anyway, there's this weeks bake! I have a chocolate pasrty roll on the blog tomorrow which was supposed to go up last week but really didn't fit into any bake off categories; it's very tasty though so do check it out!

Our Week That Was 27 & 28
It would actually be weeks 32 & 33 I think but I decided not to blog weekly in the summer holidays, blogging some of our days out instead. So much easier with the children home and lots to do! You can read about Trevaskis Farm, Lands End and our holiday to Cambridge, just a few of our summer holiday activities.
Last week:
I took the mini cupcakes to Porthleven with me as a nice way to end the holidays. We stayed for 3 nights in total seeing the harbor, seeing my Gran and Aunt and having some lovely chips from the local chippy there. I even had some me time when my mum took the children to a party at her friends place; the children had fun. I made an apple crumble cake which was pretty good, I made cookies too but they were snapped up too quick to photograph!
This week:
The children started school! Putting them in their uniform on Monday morning it really hit home just how much they've grown. Both were really excited and went in fine much to my delight. I was so worried one or both of them would not let me leave but they both went off absolutely fine. After leaving them I sat by the library for a while, some lovely flowers caught my eye so I took a snap. You can see we had our nieces and nephews over, this was on the Sunday. The had dinner then painted their faces!
I have been decorating this week! I have done the lounge and bathroom which I am pleased about. Next year we will look into getting a new sofa because ours is slowly breaking! I have also finished the dining/play room which has been half finished for over a year! I had the dentists and its official, goodbye 3rd wisdom tooth. Oh well, least I won't have anymore pain..I sat in the dentists feeling my usual anxious self and noticed the music and odd TV fish didn't make me feel any better! Is it just me?

I took my two and my eldest niece to Truro museum. They dressed up, learned about the Egyptians and took home some knowledge about Cornish history too. It was a stressful day to be honest. They touched everything in every shop, almost broke something in the museum gift shop as I looked for postcards and moaned a lot too. One of the highlights was sitting together in a Starbucks having a quick hot chocolate before rushing to the train (where A whinged all the way home!) it could've been a great day but it was just an okay day, oh well!

I spent time this week chilling out on my sofa wrapped in the blanket my cousin knitted and gave to me. I love her! I was supposed to go to my dads fun day on Friday but the car broke down half way there! I sat with mum for well over an hour chatting, eating chips and playing the number plate game. On Saturday I baked chocolate cake which Midge helped me ice and a chocolates pastry roll, yum!

Free From Apple Crumble Cake
This week was free from week on the Bake Off. I actually struggled with this one (believe it or not!) There were sugar free cakes (okay, refined sugar free cakes!) gluten free breads and a dairy free ice cream cake. I'm having to try and go with the bake that would be the cheapest on our food budget and this week proved hard. I couldn't afford the alternatives for the sugar I always put in cakes. I tried honey but I thought, yuck! I shoved in the sugar and made a sponge instead!
So this week I went with gluten and dairy free sponge cake with a topping of gluten free oats and crumble mix.
Recipe
Free From Apple Crumble Cake
A gluten and dairy free sponge cake with apples and a crumble topping. Perfect for autumn! (And when you can't chose between cake and crumble!)
Ingredients
- 150g Dairy free spread
- 150g Caster sugar
- 1 tsp Vanilla essence
- 2 Eggs
- 150g Doves Farm Self Raising Flour
- 1/2 tsp baking powder
- Doves Farm Plain Flour
- Gluten Free Oats
- Dairy free spread
- Apples (enough for your chosen dish)
Instructions
First make a sponge cake how you normally would by mixing all your ingredients together making sure there are no lumps
Pour the sponge mix into your chosen dish (I used a long dish for pies!)
Slice your apples and place them on top of the sponge mix
In another bowl, add some flour and butter. Using your hands, make a crumble. I didn't measure this bit, I just judged how big my dish was. Make sure there's not more spread than flour.
Scatter your crumble mix over the apples and sponge, covering entirely just like you would an ordinary apple crumble
I used 2 handfuls of gluten free oats and some more sugar on top of the crumble to give it that crunch.
Pour the sponge mix into your chosen dish (I used a long dish for pies!)

My Dairy Free Windtorte
So I decided to make life difficult for myself this week for The Great Bloggers Bake Off by baking a Spanische Windtorte for dessert week. I wasn't going to go near a dairy free creme brûlée no matter how much I wanted to and I didn't want to do the cheesecakes because finding a recipe was driving me nuts. Some how searching the recipes I could only really find the words 'raw', 'healthy', 'sin free', 'guilt free' am I the only person who doesn't give a fig about the guilt!? I felt like it! Besides, I baked a vegan and gluten free cheesecake in a previous Bake Off challenge so I was only left with the 1 option really!
Chickpea Bread Gluten and Dairy Free
This week is bread week on Great British Bake Off and I know for a fact that a few of those joining in were dreading bread week slightly whether they were a free from baker or not! I already knew which quick bread I was going to do and although it wasn't as great as the first time I baked it, the loaf was still incredibly moorish and even the children helped to devour it.
I found my bookmarked Chickpea Bread recipe from The Intolerant Gourmet and followed the instructions to the letter (always a good idea with a bread!) I love this recipe because it doesn't need a thousand different flours to make it which I can't afford. All you need is self raising flour (I use the Doves Farm brand) and Gram flour which can be bought from any good health food store. I also needed cider vinegar, I think if you can't have yeast you'll need to use sunflower oil? I'm sure you can find out more on Pippas post.
The loaf came out quite hard on the top which wasn't easy to cut through but had a delicious flavour. The center was delicious and perfectly soft, just like it should be. Always leave gluten free breads to cool because they can often look stodgy and undercooked when all they need is to be cooled properly.
We ate the bread warm with lots of butter and enjoyed every last slice. Fancy trying chickpea bread? I think you should!

Gluten and Dairy Free Biscotti
Today I'm blogging the biscuit challenge from last weeks Bake Off. I wasn't too worried about biscuit week, I mean I don't make wonderful biscuits but they've always tasted nice and been fairly successful. This week I took the recipe from another website. I found that 2 eggs would've been better than 3 and that there was too much water for me because my dough was pretty wet and it should've been a lot drier than that.
Gluten & Dairy Free Madeira Cake
The Bake Off is back and that means so is The Great Bloggers Bake Off! Im a little apprehensive about adding my bakes this year because I've seen so many fellow bloggers bakes already this week and the standard is very high! Of course this is all good fun and it's lovely to be inspired to bake again. I have missed the link up because I've been busy and under the weather but I thought I'd share my cake week bake anyway. I'll probably miss a few link ups because i'm going on holiday too!
Last week we had the best (and in my opinion the easiest ) week: cake week. I decided to go with a gluten and dairy free Madeira cake which is the first cake I ever learnt to bake as a little girl in my mums orange kitchen.
You Will Need
150g Butter (I use Stork or Vitalite)
150 g Caster Sugar
Generous amount of vanilla extract
3 Eggs
150g Doves Farm Gluten Free Self-Raising Flour
1/2 tsp gluten free baking powder
I mixed the butter and sugar together then added the eggs plus a little flour to stop the buttery lumps forming. I then added the flour mixing well. Lastly, Midge added the vanilla plus a little gluten free baking powder.
The overall look of the cake is very nice but if I lined the cake tin properly it would not have been so misshapen. Taste wise this cake was eaten in about 25 minutes so I'm taking that as a seal of approval! I was really happy with the inside, it was slightly fluffy but still firm which I like. It probably could've used 5 more minutes in the oven but I'm happy with my first bake.
This week is biscuit week which should be interesting depending on what I go with! Next week is bread week which I feel slightly less optimistic about! Our Week That Was Captured Week 26
Hello! Another week has gone, I'm now on day 2 of the last week of school and my how I am looking forward to not having an alarm to get up to in the morning! Right, on to last week and what we got up to.

Monday wasn't a good day for me! Anything that could go wrong today did. I was running late for both school and nursery and half way through the day I was having such bad palpitations and trouble breathing I sat for an hour with a paramedic who was very nice and very reassuring. It was simply one huge panic attack. I was given the all clear and saw my GP later that day who gave me some medicine to take which is simply there if I need it. My anxiety has been a big problem for a month now and I'm not sure why, it's very difficult. The children were really good and we had an easy evening.
On Tuesday Mr B and I saw Midge do her play at school. This years play was called Pirates and Mermaids. It kicked in watching her do her singing and dancing as a beautiful little mermaid that this would be her last ever KS1 play. Forever. My girl is growing up and there's sweet FA I can do about it *sob* On Wednesday I made a giant Reeces peanut butter cup that was very crumbly but very tasty. My nephew helped me out with the mixing and the rest of the clan who visited for dinner helped with the eating!

On Friday I totally missed a consultation for little A and no amount of fast walking was going to make it better. I called, spoke to a lovely receptionist and had it rescheduled. Sadly it's in September but it's better than nothing and was my fault! We sat and had a Costa instead which was very nice indeed before heading off to nursery. I returned later on after a solo trip to the library to watch A in his sports day which was a lot of fun. At the end was a parents space hopper race which was quite hilarious and yes, I did take part but no, I did not win. I came sixth which is better than last (and I don't care what anyone says!)

A Blog Break & Catch Up
I've had a week or so off from blogging. I've not really been doing other things, I can't remember the last time I did something I enjoyed to be honest. Mr B has been on night shifts so I've been doing everything alone and found it quite tiring to be honest! Also lonely. I've not wanted to do much once bedtime is done other than curl up and watch something on the TV. Mostly I've turned it off at 10pm and gone upstairs to deal with Little A and his wake ups.
Anyway, I've had a little break, although I wanted to blog I just didn't want to sit and edit photos but here's a little catch up of our last few weeks:
I went to Bath with Midge in the half term where we enjoyed a huge park, her first cinema visit where we watched Paddington and we both had fun on the train journey. She was scared of going over the bridge that connects Plymouth but seems to have gotten over that fairly quickly! We enjoyed our first Shakeaway, the dairy free milkshakes were delicious. The day after I came back I spent some time with both children. We had breakfast out and bought them a toy each.
I visited my Gran with Little A this week to celebrate her 82nd birthday. I made her a lemon cake and enjoyed a lovely lunch with her, my Mum and my A. I've been enjoying nature as part of 30 days wild which I've seen over on social networks. I've spotted some lovely flowers and am nurturing my own tomatoes, strawberries, potatoes and some flowers. We've bought some pebbles and a swing seat so the back garden can take a step in the right direction! We need to mow the lawn, give the decking another coat, buy more pebbles, get a bench and finally we'll use fencing to split the garden for the children and the dog. To finish the week, I had Little A's parent meeting which was really positive and baked 50 cupcakes for a friends wedding which we went to the reception of last Saturday. I had a lovely couple of hours but had to come home early because Midge was sick during the first part! At least I saw the first dance and the cake cutting and I saw all my cupcakes with the wedding cake and I felt so proud. I've banged on about it loads and I know people can make them so much better but I don't care, I loved them! (And so did the happy couple so that's all that matters!)
Now we really are on count down to the summer holidays with only six weeks left! Midge has lots planned for the upcoming weeks and on Tuesday she had a swimming assessment. She has a birthday party at the local pool to look forward to this weekend. There's an inset day on tomorrow, where I have a doctor appointment for A but otherwise nothing else planned. Mr B is back to normal work shifts and I'll just be plodding along in my usual way. I hope you're all enjoying the sun that's come out in the last week or so! I know we have!

Great First Week of Easter Holidays ~ Week 14 ~ AtoZChallenge
Oh we've had a lovely first week of the Easter holidays. We are now on week 2 and I doubt you'll get the same photos as last week! We started Monday by going to Penzance to visit several fellow Mums and their children. We had chips, popcorn, chatted and laughed and more. The children played wonderfully and even had a little egg hunt around the house (which was a converted chapel and stunning may I add!) we all enjoyed our train journey to and from Penzance.
On Tuesday I took the children to town to pick up a parcel and then they tagged along for my nurses appointment at the doctors...fun! They were rewarded by a lunch out in Weatherspoons and daddy arrived after work which was a lovely surprise.
Wednesday was a day of rest for me! We literally did very little a part from movies and playing inside with cars, trains and what not. Okay I observed more than join in but you know...Thursday oh wow I read a whole book in one day, I was so proud of myself! Midge went to my Mums' to stay for two nights. She baked Easter cupcakes and had cat cuddles plus more adventures with my sister who is down at the moment.

Friday was pamper day! Midge and my sister both got their nails done while my Mum and I went and had back and neck massages (very nice, shame the effects didn't last longer though!) It was very relaxing and a welcome change from home. Midge went back with Mum and I went home to cook a spag Bol which I devoured. Turkey mince is so good for the record.
On Saturday Little A and I just chilled out together waiting for Midge to come home. They played together for ages and I cooked a little while they were both entertained! I watched Friends today and caught up on TV. The weather wasn't great so we didn't get to watch Jay play football, hopefully will this Saturday. Sunday was lovely, you can read about it here. A whole afternoon at my Gran's house with all the family (nearly all, my brother is still up country) it was a great day with adventure and good food.

Banana Loaf~ Gluten and Milk Free ~ A-Z Challenge
Today I bring you B is for Banana Loaf with Golden Syrup and Chopped Peanuts. I love making banana cakes so shoving my mixture into a loaf tin and adding some last minute toppings of choice is a great way for me to spend an hour or so! This recipe is gluten, wheat and milk free but of course you can easily use ingredients of your choice and experiment with your toppings. Icing sugar, caramel sauce (yeah I can't make it either- disaster!) other nuts you prefer or chocolate would taste great (naturally) here goes...
*Banana Loaf with Syrup & Peanuts.
100g butter
100g sugar (I used brown sugar as that's what I had in but can use any really)
3 eggs
200g Gluten free flour (I use Doves Farm)
2 Bananas Mashed
1/2tsp bicarbonate soda
1tsp vanilla essence
Pinch of salt
Topping
Golden Syrup to drizzle
Handful of salted peanuts finely chopped to sprinkle
How To Bake The Mrs Cupcake Way:
Take all your ingredients and put them into a bowl. Mix really well, use a whisk before adding your banana if you like. Make sure your loaf tin is lined with grease proof paper and pour your mix into the tin.
Bake on 180• for 20-25 minutes (or when your knife comes out clean when inserted into the cake)
Carefully remove your cake whilst warm and now you can drizzle on your syrup or caramel or chocolate or whatever you've chosen as your desired topping.
Add those chopped peanuts and enjoy!

Great Bloggers Bake Off 2014: Cherry Cake (Free From)
The Great British Bake Off is back! That means The Great Bloggers Bake Off is back too! Hurrah! This week the challenge was very simply, cake. Mini cakes, cherry cake and um cake.
I went for a cherry cake. Not a Mary Berry cherry cake just a big standard cherry cake with some butter icing. Yum yum. Just like last year all bakes are Gluten free, Dairy free and Wheat free.
I simply took a normal recipe for a Madeira cake and bunged in 200g of glacé cherries. I baked until golden brown and clear when tested with a butter knife at 180 and left the cake to cool. I mixed up a whole box of icing sugar with vitilite butter, added pink food colouring and refrigerated until I needed it. The pesky cake must have still been a little hot despite having over an hour to cool because I noticed my icing sliding a bit. Oh well!
I decorated with fresh cherries and voila, a free from cherry cake! I'm very pleased with my first bake it tastes good but is a bit too heavy, I'd prefer it a lot more softer but it's not too bad. The cherries didn't all sink either so that's a win!

Very Delicious Gluten Free Milk Free Cookies
I had this recipe from a fellow Twitter friend some time ago now and it's my 'go to' cookie recipe I think it's originally from an Annabel Karmel book but where ever it's from it really is delicious!
For this recipe, which makes roughly 20 cookies, you will need:
- 100g softened unsalted butter
- 100g golden caster sugar
- 100g light muscavado sugar
- 1 egg
- 1 teaspoon vanilla extract
- 175g plain flour
- half a teaspoon of baking powder
- pinch of salt
- 100g chocolate chips or shamed up chocolate buttons
Preheat the oven to 190 C.
Beat the sugars and butter together until creamy. Add the egg and vanilla essence and mix.
Sift in flour, baking powder and salt and mix again.
Add the chocolate and mix in.
Roll into balls about the size of a walnut and put onto non-stick grease proof paper on a baking tray. Bake for about 12 minutes.
Put the cookies on a wire rack to cool and eat while crispy on the outside and gloopy inside.

Super Simple FreeFrom Flapjack!
I love flapjack. It's the one thing I can whip up super quick without too much fuss, mess and everything else. Sure I can make up a batch of cupcakes pretty quick but flapjacks are even quicker and satisfy a sweet craving every time.
The recipe I use is really easy. It's one I've had in a notepad for a long time so I don't actually know where its come from. I remember first baking some flapjacks when I was about 11 with my Mum and I hadn't baked them since finding this recipe and remembering how easy they are! These lovely sweet treats are both Wheat, Gluten and Dairy free. Enjoy!
